We all probably have our favourite pumpkin soup recipe, but that doesn’t mean we can’t try new ones – so I am going to share mine. It’s a little different as I like to roast my pumpkin first to add an extra layer of flavour and pop in a few spices (which I learned from my sister) which also adds to the deliciousness!
Just a note on the spices, I didn’t add any amounts as it is a personal thing and it depends on how big your pumpkin is – basically, you add in the amount that suits your taste buds. For me I tend to put in more coriander, cumin and turmeric, leaving the ginger and cinnamon as a nice back note at the end of a spoonful.
