Cheesy Corn Fritters

I am lucky enough to have access to locally grown fruit and veg that I can have delivered to my door. In amongst my last delivery, was the sweetest corn I have ever tasted, so corn fritters were instantly on the menu. This recipe, of course, works just as nicely using tinned corn.

I love to serve these fritters as part of a BBQ and serve them with caramelised onions and garlic aioli.

Cheesy Corn Fritters


1 ½ cups flour
2 cups corn (or 425g Can)
1/2 cup sliced salami
½ cup cheddar cheese, shredded
1/2 onion, diced
2 tbsp chives, chopped
½ cup milk
2 eggs
1 teaspoon salt
½ cup oil, for frying
